一、个人简介

李卓思,博士,(特聘)教授。主要从事食品安全与病原微生物防控研究,重点开展了食源性致病菌感染机制的相关研究。已在Stem Cell Research & TherapyTissue Engineering Part AJournal of NutritionFoodsLWT-food science and technologySCI期刊20余篇。

五、主要研究方向

1.潜在食源性微生物病原体研究。

研究范围包括:

1)易感性和致病性研究,以识别不同来源病原微生物对宿主的风险;

2)基于新型细胞感染模型(如类器官),评估食品源微生物感染的机制和路径;

3)分析宿主与病原体相互作用。

2.新型生物抑菌方式的研究

研究范围包括:

  1. 单一抑菌方式的探究:食品酚类物质、食品类胡萝卜素类、酸菌等益生菌类等

  2. 联合抑菌方式的探究。
